I’ll be the first to admit that I love breakfast foods, no matter what the meal is! Anything that comes hot off the griddle is good in my books – and hash browns are a definite favorite! I also love recipes that are quick and easy to make… This cheesy hashbrown casserole is the best of both worlds!

With tantalizing tastes coming from sharp cheddar cheese, onions, chicken soup, and homestyle spices like salt and pepper, this dish is very satisfying. Best of all, this recipe makes a good size casserole that is perfect as a side in a big family meal, or as your contribution for the next potluck party you go to!
1 bag (about 30 oz) frozen hash browns, thawed

1 stick butter, melted

1 can cream of chicken soup

1 small onion, chopped

8 ounces cheddar cheese, shredded

1 teaspoon salt

1/2 teaspoon black pepper

1 cup sour cream
Grease 9×11″ baking dish. Preheat oven to 350.

In a bowl mix onion, soup, black pepper and all but one cup of the cheese.

Add sour cream and mix well.

Add hash browns and melted butter. Mix well.

Transfer to prepared dish and top evenly with remainder of cheese.

Bake 45-55 minutes until bubbly.
