Fresh Tomato Balsamic Bruschetta
2-3 on the vine tomatoes (diced)
1/4 red onion (diced)
1 garlic clove (minced)
1 Tbsp olive oil
1/2 Tbsp balsamic vinegar
30 grams light shredded Mozzarella cheese
Fresh basil (to taste)
Oregano (to taste)
Salt and pepper (to taste)
Makes 2 servings.
Mix ingredients all together and keep cold until use.
I had mine over sliced grilled steak. So amazing!! This would be great over chicken as well and of course bread!
